The Best Chewy Oatmeal Chocolate Chip Cookies

The frustrating part is that so many bakers never share their recipes. Luckily, today I'm sharing one of my favourite cookie recipes with you. These oatmeal chocolate chip cookies are soft, chewy, loaded with chocolate, and incredibly easy to make. They're the kind of cookies that disappear almost as soon as they come out of the oven!

Ingredients
- 1 large egg
- ½ cup unsalted butter, softened
- ¼ cup packed light brown sugar
- 2 tablespoons granulated sugar (or up to ¼ cup if you prefer a sweeter cookie)
- 1 tablespoon vanilla extract
- 1½ cups old-fashioned rolled oats (not instant or quick oats)
- ¾ cup all-purpose flour
- ½ teaspoon baking soda
- Pinch of salt
- 1 heaping cup chocolate chips (or white chocolate chips)
Instructions
Step 1
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the egg, softened butter, brown sugar, granulated sugar, and vanilla extract. Using an electric mixer or a spoon, mix for 4–5 minutes, or until everything is smooth and well combined.
Step 2
Add the flour, rolled oats, baking soda, and salt to the bowl. Mix until all the ingredients are incorporated and in cookie dough forms. This should take about 1 minute.
Step 3
Fold in the chocolate chips. Feel free to add a little extra if you'd like! Mix until the chocolate chips are evenly distributed throughout the dough.
Step 4
Line a baking sheet with parchment paper.
Scoop the dough into balls and place them on the prepared baking sheet, leaving space between each cookie. Gently press the tops down slightly. If desired, add a few extra chocolate chips on top for a bakery-style look.
Bake for 15–20 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for about 10 minutes before transferring them to a wire rack.
Then grab a cookie, pour yourself a glass of milk, and enjoy every chewy, chocolate-filled bite!
